Squash is a versatile food that can be used as an accompaniment to grains, beans, soups, stews or just roasted on its own.  Given the endless possibilities, we have dedicated a class to this seasonal bounty loaded with phytonutrients, fiber, vitamin A and good old fashioned sweetness.
