The Power of Greens!

Dark leafy greens, like Kale and Collards, Swiss Chard, and Bok Choi are chock full of fiber,phytonutrients, vitamins and minerals.  They are a major source of energy and also provide us with Calcium, a lesser known fact about this superfood group.  They also provide vitamin C, two times the daily serving in fact! Vitamin C provides resistance against infection, which is vital during cold and flu season when our immune systems may be at their lowest. In fact,  dark leafy greens also provide the nutrients to build a strong immune system and keeping that system strong can help you fight off the invasion all together.

Greens are one of the most powerful food groups to keep our bodies functioning at their best,  yet also one of the most missing components in todays Standard American Diet (SAD). Given this crazy weather we are facing here in the northeast, we can truly benefit by adding more of them into our daily diet to keep us healthy and strong on these frigid days.  We enjoy using a variety of these hearty winter greens in our classes.   Check out our brand new class, Superfoods: Focus on Kale to find easy and surprisingly delicious recipes using dark leafy greens!
