Gingery Garlic Swiss Chard and Mushroom Saute

Ingredients:

2 Tablespoons Coconut Oil

2 Tablespoons Garlic, minced

1 teaspoon Ginger, minced

Pinch of Red Pepper Flakes

I large Bunch Swiss Chard, cut into bite sized pieces

1 Cup Shitake Mushrooms, sliced

Sea Salt and Pepper to taste

 

In a large sauté pan over medium heat, add Coconut Oil.  Once melted, add Garlic and Ginger stirring to infuse flavors into oil.  Add pinch of Red Pepper flakes and sauté until mixture begins to bubble, approximately 2-3 minutes.  Add Mushrooms and toss to coat.  Cook until the Mushrooms becomes tender, approximately 3-5 minutes.   Add Swiss Chard and continue to cook until greens become bright green and wilted – mixing to incorporate flavors throughout.
